Spiced cornmeal porridge

A warm, filling breakfast — spiced, not over-sweet.

Ingredients

  • ½ cup fine cornmeal
  • 2 cups water
  • 1 cup low-fat or plant milk (oat works well)
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • 1 tsp vanilla
  • A little sweetener to taste (go easy)
  • Pinch of salt

Steps

  1. 1Whisk the cornmeal into 1 cup of the water until smooth (no lumps).
  2. 2Bring the rest of the water to a boil, then slowly whisk in the cornmeal mixture.
  3. 3Cook on low, stirring often, until it thickens — about 8–10 minutes.
  4. 4Stir in the milk, cinnamon, nutmeg, vanilla, and a little sweetener.
  5. 5Cook another couple of minutes and serve warm.
