Spiced cornmeal porridge
A warm, filling breakfast — spiced, not over-sweet.

Ingredients
- ½ cup fine cornmeal
- 2 cups water
- 1 cup low-fat or plant milk (oat works well)
- ½ tsp cinnamon
- ¼ tsp nutmeg
- 1 tsp vanilla
- A little sweetener to taste (go easy)
- Pinch of salt
Steps
- 1Whisk the cornmeal into 1 cup of the water until smooth (no lumps).
- 2Bring the rest of the water to a boil, then slowly whisk in the cornmeal mixture.
- 3Cook on low, stirring often, until it thickens — about 8–10 minutes.
- 4Stir in the milk, cinnamon, nutmeg, vanilla, and a little sweetener.
- 5Cook another couple of minutes and serve warm.
